I let my old sourdough starter go over the holidays, and I just finally got around to making a new starter. It was finally ready for use today. I use the traditional sourdough recipe from Nourishing Traditions. I usually use spelt to make the bread, but I only had about four cups today, so I did spelt and whole wheat, and then I snuck in two cups of white flour in hopes that it might make it more palatable for Jonas, who would never eat it when I used to make it. It is a very heavy bread. He had a couple bites tonight, but wasn’t too interested. Maybe it will grow on him.
I think it is so cool that sourdough is a living, changing thing and each starter has its own personality. I look forward to seeing how this one develops.
